Minced Pork and Veggies Rice Congee

There are so many ways to prepare and cook congee rice porridge. Typically served in Asian countries during breakfast meals and often the preferred option for people who are unwell due to its easy-to-eat and digest components.

The main ingredient in cooking congee is rice cooked with a generous amount of water until softened porridge. Instead of water, stocks can also be added with some flavoring and a good balance of seasonings to make a savory dish tasty.

Some serve it with some side dishes, some cook it with chicken called Arroz Caldo in the Philippines, or some cook it with vegetables or some added bits of meat to the mixture.

This recipe is cooked with minced pork with vegetables. It is an easy dish to prepare; just boil all the ingredients in slow cook heat and season with salt and pepper.

Ingredients

  • 1 cup of white rice/jasmine rice
  • 100 g minced pork
  • 2 liters of chicken stock
  • Chopped white onion medium size
  • 2 cloves garlic crushed
  • 1 small carrot chopped into tiny cubes
  • 100 g cabbage sliced into small pieces
  • Sliced of ginger
  • Thinly sliced spring onion or scallions
  • Salt and pepper to taste
  • Water as  needed

Cooking Procedure

  1. Rinse and drain the rice.
  2. On the pot, saute minced pork until golden brown, follow with ginger, minced garlic, and chopped white onion.
  3. Put the rice in a pot with the chicken stock, and bring it to a boil. Turn on the heat to low and cover the pot. Keep stirring the rice to prevent sticking to the bottom. Simmer gently for at least 30 minutes then, add all the vegetables and let it simmer for another 30 minutes. Keep stirring until reach the consistency of the grains bust open and thicken. Keep an eye always, and add water as needed.
  4. Season with salt and pepper to taste. Garnish it with spring onions.

Cooking Tips:

  • Keep an eye, check and stir always approximately every 10-15 min to avoid burning in the bottom or sticking to the bottom.
  • Make sure to get a consistency like oatmeal.
  • Suggested ingredients, a sprinkle of sesame oil for additional aroma, can also use fish sauce, and soy sauce, add roasted garlic or roasted onion, add chili flakes, boiled eggs, or any you think that is suitable for the dish.
  • Good stocks good soup base, can also use vegetable stocks or mainly water.
