Shrimp Fried Rice

This dish is all in one: cooked rice that has been stir-fried in a wok or frying pan and mixed with other ingredients like eggs, meat (pork, chicken, and seafood), and vegetables.

Some cooks just stir-fry it with garlic/roasted garlic or saute it with some shrimp paste, some will do tomato fried rice or curry fried rice. It is often eaten by itself or as an accompaniment to another dish.

Ingredients:

1 cup leftover fried rice
6 pcs shrimp, shelled off and deveined
2 eggs, beaten
1 small white onion, chopped
Carrots, chopped
Spring onion, cut into small pieces
Cabbage, sliced
5 pcs of Baguio beans/french beans/Kentucky beans, cut into tiny pieces
Cooking oil

Seasoning:

Chicken powder 1/2 tsp
Salt to taste
1 tsp light soy sauce

Procedure:

Heat wok or frying pan with cooking oil. Put beaten eggs and scrambled thru half-way cooked.

Remove and put on a separate plate.

Add a little bit of oil, stir-fry shrimp, and set aside. Put chopped onion, and add cooked rice, chopped carrots, beans, and cabbage.

Mix thoroughly, and add cooked shrimp, spring onion, cabbage, and seasoning. Keep stirring until all is done.

Best serve while it’s hot!

Cooking Tips:

Wash and clean the shrimp properly. Take out the head and keep for your soup base in your future cooking. Peeled the skin and carefully pick out the black or green vein that runs along the back and discard it or use a knife to cut half-thru and easily removed the vein.

Make sure your wok or pan is hot enough to avoid sticking in the bottom. Use a non-stick pan instead.

You can also add curry powder or turmeric powder for additional aroma.

You can have fresh ripped mango or fresh pineapple chunks.

  • 1/2 tsp chicken powder 
  • 1 pinch salt to taste
  • 1 tsp light soy sauce

Instructions
